About James Peth
Dr. James Peth is an assistant professor in the Department of Food Science and Human Nutrition at Colorado State University. He develops and teaches various undergraduate and graduate courses in food science and human nutrition. His main interest is preparing experts in the integrative science of nutrition who are equipped to address complex issues in public health. James recently completed a mixed-methods project to systematically evaluate and redesign undergraduate courses in nutrient metabolism. He has led two CSU-provost-funded course redesign projects, developed and helps manage a food production wiki (fsi.colostate.edu), and works on multiple projects with CSU Extension's Nutrition, Food Safety, and Health team.
