- Mediterranean Chickpea Salad: The Mediterranean Diet is not really a “diet” but rather a style of eating. This eating pattern is associated with many long-term health benefits, such as lower rates of chronic disease. The Mediterranean Diet emphasizes foods including olive oil, vegetables, and legumes – like chickpeas! This Mediterranean Chickpea Salad is packed with chickpeas (of course) and delicious summer produce, like bell peppers, green onions, and cucumbers.

Chickpea Waldorf Salad: When you think of Waldorf salad, chickpeas may not be the first ingredient that comes to mind. Trust us though – chickpeas make this take on Waldorf salad extra satisfying, all while boosting protein and fiber. Fresh grapes provide a pleasant burst of flavor, and walnuts bring healthy fats.

Blend up chickpeas with a little bit of broth, garlic and other seasonings of choice, until creamy. Add this sauce to cooked penne or rotini pasta with what ever veggies you have on hand.
